I am pretty sure Wolf Creek will be hiring a new class of NSO apprentices after the March outage.  It's not the southeast (Kansas), but it is a great company to work for and the cost of living is much lower than most places.

There is also talk of starting another NLO (SOIT) class at Plant Hatch for the Southern Company later in the year.  They are needing  NLO and RO operators. Six months as an NLO and you could esily step into a RO position. The pay is lower than most plants in the country but there is talk of increasing the operators pay.
